Many of our customers are new to unsalted, uncured, raw bacon, also known as pork belly. When prepared properly, it's unmatched! Here are a few of our tips for preparation.
Pull the bacon out of the freezer and leave it in the refrigerator overnight or defrost packaged bacon in water for an hour. This is just like cooking cured bacon, but you need to add salt and pepper. Heat a fry pan to medium-high heat and liberally season each side with salt and a little pepper. The slices will turn a little bit grey before they start to crisp up, so don’t worry. Because the slices are so thick it will take a little longer to fry and they will not turn bright red, because it is free of nitrates and carcinogens. Transfer to a plate with paper towels to absorb any extra moisture and steal a taste :). Add a little bit more salt if needed, then allow to sit for 3 minutes to finish crisping up.
For easier clean up and no flipping lay the defrosted bacon on a cookie sheet, season with salt and pepper. DO NOT preheat your oven. Place cookie sheet in the oven and turn the temperature to 420 degrees. Bake for approximately 20 minutes or until it looks crispy and your house smells heavenly. Remove the pan from the oven and transfer to a plate with paper towels to absorb the excess fat.
